Stir-Fry String Beans With Mince Chicken
Serves : 6
Ingredients :
1lb string beans
1oz. mince chicken
2tbsp of finely chopped dried shrimps
4 tbsp Szechuan pickled green mustard, chopped
3 cups oil for frying
1 tbsp rice wine
(A) ½ tbsp soy sauce
½ tsp sugar
¼ tsp msg
½ tbsp water
½ tbsp chopped green onion
½ tsp sesame oil
Method :
1. Remove ends of string beans and pull away any “veiny” strings. Rinse and drain. Cut into 3 inches length.
2. Heat oil for deep –frying. Deep fried string beans over medium heat for 5 minutes. Remove and drain.
3. Remove all oil and leave 3 tbsp of oil in pan. Reheat the oil and stir fry mince chicken until it changes colour.
4. Add dried shrimps and Szechuan pickled green mustard and stir fry for 30 seconds.
5. Add in string beans, rice wine and (A). Stir fry until sauce is quite dry and add in chopped green onion and ½ tsp of sesame oil.
6. Toss lightly to combine all ingredients and ready to serve.
