Chicken Kurma Curry

Ingredients :
500gm chicken
60gm Alagappa’s Kurma Curry Powder
1 cup thick coconut milk } extracted from
2 cups thin coconut milk } 1 grated coconut
Few mint leaves
1 cup of water
Cooking oil
Salt to taste
Seasoning A
Spices To Grind
7 Shallots
2 Cloves Garlic
5cm Ginger knob
3 green chillies
1 tbsp cashew nuts
5 blanched almonds
Seasoning B
2 Star Anise
4 Cardomoms
5cm Cinnamon stick
3 Cloves
1 medium size Onion – sliced

Cooking Instruction :

  1. Heat oil in pan, sauté Seasoning B till slightly golden brown.
  2. Put chicken, salt and water, bring to boil, stir fry for 15 minutes.
  3. Add grinded Seasoning A and Alagappa’s Kurma Curry Powder .
  4. Toss in the coconut milk, bring to boil and then toss in thick coconut milk.
  5. Simmer over low heat until the gravy is thicken.
  6. Add mint leaves and serve while hot.
  7. *If required gravy thin, add 2 cups of water.
